Pelican launches Piranha™: a free-of-charge, food allergen, menu costing and nutritional analysis tool
Supporting foodservice operators in accessing required allergen data in advance of the introduction of new legislation
Pelican Procurement Services, the procurement and supply chain management specialist, has today announced the launch of a new cloud-based system that provides food allergen information to organisations serving food to the public, in readiness for the new food labelling legislation. Piranha™ is a free menu costing system that not only provides Pelican customers with a live, detailed breakdown of portion costs, but offers allergen and nutritional information that can be relied on.
From 13 December 2014, the Food Information for Consumers Regulation legislation comes into force, which requires any operation that provides food to the public – whether a restaurant, take-away, school, college, hotel or hospital – to be able to provide details of any allergens contained within a dish, on request. A financial penalty will apply if the new legislation is not adhered to.
Within Piranha™, users can ‘build’ their menu items, add details of how each is made and even include a photo. Allergen information is instantly available for every dish, as needed. The system also includes ‘live’ menu costing functionality: using customer’s purchase invoice data, an accurate cost can be calculated for every portion made. Operators can then easily track, control and monitor in real-time how much each dish costs, what the profit margins are and make adjustments, as required.
Pelican has worked with suppliers to access the allergen details of their food products, as well as basic nutritional information. This includes calories, fat, salt and sugar content, as well as General Daily Allowance (GDA) information for men, women and children.

Piranha is being launched in beta version at the end of September.
